Ten years ago I decided to capture a photograph every day of the year of people I met and places I visited. On January 1st of 2011, I resumed the project.
June 3rd. Air Dried Ham. Today was one of those days when one year's worth of work either works or not. Having fed the pigs for 6 months, salted the leg for a month and then dried it for 5 months. It was the moment of truth. Quite delicious.
